Pousse en Claire Red Label is another exceptional product. For a long time, it was distributed confidentially, reserved for a clientele of initiates. Raised at a very low density, no more than 5 per square metre in the Claires, where it stays for four to eight months, the oyster will reach a high level of meatiness, as well as a pronounced taste of the land that lingers in the mouth.
