Here, we are talking about a rather unique product, the first ever labelled seafood product, in 1989. The Green Fine de Claire Red Label is subject to demanding, even very demanding, control standards. Its colour, as chic as it is photogenic, is obtained thanks to the presence in the Claires of the blue navicle, a micro-seaweed filtered by the oyster which retains the pigment, called the marennine. An exceptional oyster, marketed from October to May to respect its reproductive cycle.
